1whats considered poultry
EU, UK and USA - defines poultry as chickens,
doves, ducks, geese, grouse, guinea fowl,
partridges, pea fowl, pheasants, quail, swans, and
turkeys.
USA- counts ostrich
2when are broilers killed
34-42 days
3chicken processing steps
lairage
shackling- certificate of compentence needed
stunning- if electrical
bleeding
scalding
defeathering
PME carcase
hock cutting
evisceration
PME offal
washing
chilling
4how to ante mortem inspec birds
open crate, look at bunch and assume same for all birds
FCI importnat- more information on it
5what does the certificate of compentence cover in the lairage
• The person can safely handle animals before they’re restrained.
• Can safely restrain animals for stunning or killing.
• Can humanely stun animals.
• Knows how to check stunning has worked.
• Can shackle or hoist live animals correctly.
• Can bleed live animals.
• Is aware of techniques for religious slaughter.
6how to decrease stress at lairage
keep them cool and venitaled
designated welfare officer in the lairage
kill quickly
if theres a breakdown- send to another abbatoir
can send birds to another abbatoi if already at lairage.
7how is neck cutting done
within 15 secd of stunner
mechanical cutters- carotid
need good positioning and accurate
operator present to ensure everyone cut
break of WATOK if they recover from the stun
8how does scalding work
submerge into tank of water
50-53 degrees or 56-58 degrees
used for feather removal
shit soup- everything is assumed contaminated from this point
9why is scalding not a CCP
is not for sterility, everything in contaminated and a shit soup great for bacteria:
wet
warmed up- kill at 80 degrees and were no where near the temp
faecal makes ammonium urate and uric acid= ph=6, good for bacterial growth
salmonella and campylobacter surive
10what happens with salmonella positive birds
go at the end, so dont spread salmonella through the scalding tank to every other bird
11how cheap are birds
20c/ dollar
if any problems just bin them
12what happens with defeathering
fingers rub carcase to get feathers off
contamination step
13what birds are condemed at whole carcase inspection
Systemically diseased birds, badly bled
birds and badly bruised carcasses are
condemned.
14how are hocks cut off
severed off
inspected at the end
sold for piss cheap in asia
look for bumble foot- can destroy or sell over seas
15what happens with evisceration
spoon removes the viscera
must remina with the carcase the whole time until inspection
16what to look for on offal PME
looking for edible vs non edible
sepesis
damage
fibronogen
liver hepatitis
17why wash chickens
USA- cholinated
UK- hose blast.
remove some bacterial contamination- but not sterile
18how are carcases chilled quickly
counterflow current
from 30 to 4 degrees
19bacteria of most concern in poultry
salmonella- many specieies
20salmonella subtypes
pullorum= white diarhhoea, <3wks old
gallinarum- typohid, all ages, acute, anaemia, septicaemia, hepatomegaly. haemorrhage in kidneys, skeletal muscle congestion
21what does septicaemia affect most
high blood flow organs last to shut down:
kidney heart
peritoneum
22most common disrrhoea cause in humans
caylobacter
23prevalence of capylobacter in supermarket
76%
high prevalence on farms
24source of campylobacter on farms
outside, drinking water, wild birds, inscects, rodents
once its in a flock it will spread fast
25how does capylobacter spread in the body
Chickens become infected at 3 weeks alongside peak Salmonella
levels
• Transmission to 90% of the flock within 7 days.
stress increases transmission and prevalences
no CS
26other bird disease
chlamydia pssiticia- zoonotic
intracellular parasite
infect people by inhaling dust
27signs of psittacosis in birds
airsacculitis (thick air sacs
with white/yellow exudate),
pneumonia, pericarditis,
perihepatitis, hepato and
splenomegaly.
28is pssittacosis notifiable
no, but its reportable
29other causes of injury/ death
dead on arrival: condem
traumatic injury: bruise, fractures, condem
breast blistters/ hock burn: substate issue, tendon rupture if grew too fast, condem
ascites: RV failure, rapid growth. c.perfringes. condem
fatty liver haemrorhagic syndrome: nutritional issues. bin liver ,eat bird
vices: cannabilism, feather plucking
egg peritonitis- condem from excess inflam
septicaemia- e coli , salmonella, dark muscles, condem
30what is emaciation
pathologicall diagnosis: only done at PME
not just low BCS/ poor condition
gelatinous/ grey/ liquid fat- around organs and in bone marrow
31what disease do turkeys get
oregon disease- green muscle disease
pectoral myopathy
ischaemic necrosis
comdem area affected
32production causes causing condemnation
contamination
decomposition
barking- damage from scalding and plucking. brown discolouration
over scalf
fevered carcases
insufficient bleeding- cherry neck
viscera absent
33pig processing process
stunning
schackling
bleeding- thorax cut, brachial plexus
scalding- hotten than chickens, 60 degrees
flaying- dehairing
singing- blast with fire
polishing
washing
evisceration
splitting
PME
chilling- 5-7
boning
34when are pig recontaminated
dehairing stage- hence why singing
but then scraping anf polising contmainates again
35bacteria of concern in pigs
e coli
then salmonelal and camylobacter
36what to do if animal falls of the line
red meat- contaminated and so destoyed (unless preskinning)
chicken= no point bin it
pig= if flal off before scalding, can pick back up and put on, since goin to recontaminated and worth a few hundred pounds.
37how to stun rabbits and kill them
electrically
captive bolt gun
blunt force trauma- kills
exsanguination by jugular and carotid cut
USA= neck dislocation, blunt force trauma
38how to processs rabbits
hung
head removed
fore feet removed
skin cut around legs
tail removed
skin pulled down over body
lower abdomen cut- intestines and lungs are removed
liver kidneys and heart remain
cool 4 degrees
39rabbit carcase issues
DOA- condem
badle bled carcases- vessels larged, congested flesh. condem
trauamtic injuries- staph infection, abscess. can cut a margin away, or condem
40rabbit carcase diseases
• Enteritis = Clostridium piliforme. Mild (inflamed) to serve (haemorrhagic). Condemn.
• Mastitis= Staphylococci or streptococci, remove mammary
• Metritis = Staphylococci, Pasteurella or Listeria monocytogenes
• Tumours= Single – trim, multiple – condemn.
• Pasteurellosis = Pastuerella multocida. Rhinitis, bronchopneumonia, middle-ear disease, genital infection and abscessation progressing to septicaemia and
death. Severity affects outcome.
• Spirochaetosis = Treponema cuniculi. Local infection of vesicles which become moist scaly crusts mucus membrane and genitalia. Trim / condemn.
• Myxomatosis = Conjunctivitis with clear discharge progressing to purulent, swollen eyelids. Oedematous ears cause droop. Decrease body condition. Splenomegaly and necrosis. Condemn.
41other name for clostridum piliforme in rabbits
(Tyzzer’s
disease)
42rabbit parasites
common in jaw and diaphragm
• Taenia taeniaeformis= Cat tapeworm presents as white cysts in the liver.
Trim / condemn.
