once the mold is in the machine and ready to start, what must be done first?

1. extrude gyro with piston and remove top paper and plate
2. check for instability and remove once stable
3. flip gyro and set on cooling rack, remove the bottom paper
4. release gyro mold piston and return mold + plate to oven
